Ingredients

  • 16 cake doughnut
  • 1 stick unsalted butter
  • 1 cup sugar
  • 5 5 large egg lightly beaten
  • 2 cups heavy cream
  • 1½ tsp ground cinnamon
  • 1 tbsp pure vanilla extract
  • ½ cup raisins
  • 4 tbsp unsalted butter
  • ½ lb powdered sugar
  • dark rum to taste

Instructions
 

Bread pudding:

  • Preheat the oven to 350 degrees F (175 degrees C)
  • In a food processor, combine a stick of butter and a cup of sugar for a small time until it forms into a ball. To this add heavy cream, eggs, vanilla extract and cinnamon. Process this until blended.
  • Lightly butter a 9 x 13 inch baking dish. Breakup the doughnuts into 1 inch piece and layer them in the pan. Add some raisins on top. Pour the egg mixture over the doughnuts and soak for 5 to 10 minutes. You will need to push the Doughnut pieces down during this time to ensure there is even coverage of the egg mixture.
  • Cover it with foil and bake for 35 to 40 minutes. Remove the foil and bake it for 10 minutes so that it browns on the top. Once the custard is set, the Doughnut pudding is ready, but it will be still on the softer side

Rum Sauce:

  • Melt 4 tablespoon of butter over medium heat in a saucepan and take it off the heat once done. Add the powdered sugar to the butter and mix well to blend. Add rum to taste. Pour the sauce over the bread pudding and allow it to soak in it
