Ingredients

  • 2 pounds Yukon gold potatoes about 5 cups diced and unpeeled
  • ½ cup low-fat buttermilk
  • ½ cup skimmed milk
  • 4 tablespoon grated parmesan
  • Salt
  • 1 tablespoon unsalted butter

Cooking Instructions

  • Put the potatoes in a large sized saucepan and cover it with water. Bring it to a boil and reduce heat and cook until it is tender. This will take about 10 minutes.
  • While potatoes are cooking place the buttermilk and milk into a small sauce pan and cook over a low heat until it is warm. Make sure not to boil the milk or else it will curdle. 
  • Now, drain the potatoes and to this add the warm milk and mash well until you reach the required consistency. Make sure there are no lumps left. Milk can be added more or less to make the potatoes thin or thick according to your liking. 
  • To this add the cheese and salt. Top it with some butter and let it melt. 
  • Serve warm.
