Ingredients
¼cupolive oil
6clovesgarlic, minced
2tbsplemon juice
1tbspfresh thyme, chopped
1tbsporegano, chopped
1tbsprosemary, chopped
1tbspparsley, chopped
½tbspmarjoram (optional)
pinch of nutmeg
salt and pepper to taste
Instructions
Take a medium bowl and mix olive oil, garlic, lemon juice, thyme, oregano, rosemary, parsley, Marjoram, nutmeg, salt, and pepper thoroughly.
Put the chicken in the marinade, and use the herb mixture to layer it.
Use plastic wrap to seal the bowl or position a Ziplock bag over it and allow it to refrigerate for at least an hour. If you can let it remain inside overnight, that’s even better.
Remove chicken from the sauce using a tong and eliminate the excess marinade.
Preheat the grill to medium-high heat. Allow the chicken to rest on the grill, and each side must be grilled for about 5 minutes till you see some nice charring. Periodically, you may need to turn the chicken to the other side for thorough cooking. To check if it is done, an instant-read thermometer can be placed inside. Ideally, it must read 160 degrees F.
You can also make a small cut in the center and see if it is adequately opaque.The chicken can then be removed from the grill.Allow it to rest for 5 minutes before serving.
