Healthy Air Fryer Eggplant Parmesan

This dish is not only a crowd-pleaser, but it also showcases the versatility of the air fryer in creating healthier versions of traditionally fried foods.

Ingredients

  • 1 large eggplant1 cup
  • 2 eggs, beaten
  • 1 cup flour
  • 1 cup bread crumbs
  • ½ cup grated Parmesan cheese
  • ½ tsp salt
  • ¼ tsp black pepper
  • 1 cup marinara sauce
  • 1 cup shredded mozzarella cheese

Instructions

  • Salt and dry the eggplant: This step is optional, but if you prefer to salt your eggplant, slice it into 1/2-inch slices and sprinkle them with salt. Let them rest for 15 minutes, then pat them dry with a paper towel.
  • Prepare your dredging station: Whisk the eggs in a shallow bowl and combine the panko breadcrumbs, grated parmesan cheese, and black pepper in a separate bowl.
  • Assemble: Dip each eggplant slice in the flour and then beaten eggs and next coat them with the breadcrumb mixture. Press gently to ensure an even coating. Place the breaded eggplant slices on a baking sheet.
  • Air Fry: Preheat your air fryer to 350 degrees F and place the breaded eggplant slices in a single layer in the basket. Air fry until crispy and golden brown, flipping them halfway through.
  • Add the toppings: Top each slice of air-fried eggplant with marinara sauce and mozzarella cheese. Air fry for an additional 1 to 2 minutes, or until the cheese melts.
  • Garnish and serve: Transfer the air-fried eggplant Parmesan onto a plate and garnish with dry origano and parsley.
