In a large mixing bowl, combine the all-purpose flour and salt. Mix well to evenly distribute the dry ingredients.
Create a well in the center of the flour mixture and pour in the warm water and olive oil. Using a fork or your hands, gradually incorporate the wet ingredients into the dry mixture until a dough forms.
Transfer the dough onto a lightly floured surface and knead for about 3-5 minutes until the dough becomes smooth and elastic. If the dough feels sticky, add a little more flour. If it feels dry, sprinkle some water.
Divide the dough into small golf ball-sized portions( 50-55 g each). Roll each portion into a smooth ball and cover them with a clean kitchen towel. Let the dough rest for about 30 minutes to allow the gluten to relax.
Take one dough ball at a time and flatten it into a disk (approx. 8 inch) using your hands or a rolling pin. Aim for a thickness of about 1/8 to 1/4 inch. If the dough sticks, lightly dust the surface with flour.
Heat a skillet or griddle over medium heat. Make sure the surface is hot before proceeding.
Carefully transfer the flattened dough onto the hot skillet and cook for about 30 seconds to 1 minute on each side. The tortilla should puff up slightly and develop golden brown spots. Flip and cook the other side until done.
Remove the cooked tortilla from the skillet and place it on a plate or a clean towel. Cover with another towel to keep them warm and pliable while you cook the remaining dough.
Repeat the process with the remaining dough balls until all the tortillas are cooked.
